Atayef - stuffed semolina pancakes with cinnamon walnuts

Atayef are the little stuffed pancakes of Ramadan, made by the hundreds in Syrian kitchens when the fast breaks. The batter is poured onto a hot griddle and cooked on one side only, so each pancake puffs with a pale, spongy top. They are folded around walnuts or sweet cream, fried until golden, and dunked in rose-scented syrup. The sound of atayef sizzling means iftar is minutes away, and the kitchen fills with family waiting by the pan. No Ramadan table is complete without a towering plate of them.

The pancakes are soft and spongy with a delicate yeast aroma, giving way to a crunchy, cinnamon-scented walnut filling. Fried just until golden, they turn crisp outside and tender within, then soak up the syrup like tiny sponges. Serve them warm with the syrup poured over at the table — they are impossible to eat just one of, and everyone will reach for seconds.

Step by stepInstructions

  1. Whisk the flour, semolina, yeast, sugar, salt, and warm water into a thin batter. Cover and rest for 30 minutes, until bubbly.
  2. Make the syrup: boil the sugar, water, and lemon juice for 8 minutes, cool, and stir in the rose water.
  3. Mix the walnuts with the sugar and cinnamon for the filling.
  4. Heat a nonstick griddle over medium heat. Pour small ladlefuls of batter to make 3-inch pancakes and cook until the tops are full of bubbles and the edges look set, about 2 minutes. Do not flip.
  5. Transfer the pancakes cooked-side up to a tray, spoon a teaspoon of filling onto each, and fold into half-moons, pinching the edges to seal.
  6. Heat the oil in a skillet and fry the atayef in batches until golden on both sides, about 2 minutes per side. Drain on paper towels.
  7. Dip the warm atayef into the syrup, or pour the syrup over them, and serve immediately.

💡 Chef tips & storage

Cook the pancakes on one side only — the bubbles tell you when to pull them. Seal the folded edges well, or the filling will leak out during frying.
