Bacalhau com Natas

Bacalhau com Natas is the velvety side of Portuguese cooking — salt cod folded into a rich cream sauce with onions and thin potatoes, then baked under a golden gratin. It is a dish of pure indulgence, comfort food that tastes like a warm blanket on a rainy day.

While purists argue over the perfect ratio of cream to cod, everyone agrees it belongs at the center of the table, bubbling from the oven. Pair it with a light green salad; the richness needs a bright, crisp companion.

Step by stepInstructions

  1. Poach the soaked cod for 5-7 minutes, drain, cool and flake it.
  2. Fry the potato slices in olive oil until lightly golden, about 10 minutes, then drain.
  3. Soften the onion and garlic in butter, add the cream, milk, bay leaves and nutmeg, and simmer 5 minutes.
  4. Fold the cod and potatoes into the sauce, season, and transfer to a gratin dish.
  5. Top with grated cheese and bake at 375°F until golden and bubbling, 25-30 minutes.
  6. Rest 10 minutes before serving.

💡 Chef tips & storage

Shallow-fry the potatoes rather than boiling them for a firmer bake. The dish reheats beautifully — make it a day ahead for deeper flavor.
