Basbousa is the semolina cake of the Middle East, a golden tray of diamond-scored cake soaked in lemon-scented syrup and crowned with almonds. In Egypt it is served at weddings, funerals, and every celebration in between, and bakeries sell it by the kilo. The name and recipe vary from country to country, but the Egyptian version, coarse semolina, yogurt, and ghee with a syrup that lets the cake shine, is a family favorite that keeps well for days, which is why Egyptians always make a full tray.

Chef Emily presents Basbousa (Semolina Syrup Cake)

Golden diamonds soaked in lemon syrup

The cake bakes up dense and slightly grainy from the semolina, with a tender, moist crumb that soaks up the syrup without turning soggy. The contrast is the magic: crisp, buttery edges, a soft sweet center, and the bright snap of lemon in the syrup cutting through the richness. Let it rest so the syrup sinks in, cut it along the scored lines, and serve it with mint tea or a strong Egyptian coffee. One piece is never quite enough.

Step by stepInstructions

  1. Heat the oven to 350°F. Butter a 9 by 13-inch baking dish.
  2. Make the syrup: simmer the sugar, water, and lemon juice for 10 minutes. Cool, then stir in the orange blossom water.
  3. In a bowl, mix the semolina, sugar, and baking powder. Stir in the yogurt, melted ghee, and vanilla until combined, then let the batter rest for 20 minutes.
  4. Spread the batter in the prepared dish. Score it into diamonds and press an almond into the center of each piece.
  5. Bake until deep golden brown, 35 to 40 minutes.
  6. Pour the cool syrup over the hot cake, then let it rest for at least 1 hour before cutting along the scored lines.

💡 Chef tips & storage

Pour the syrup cold over the hot cake — that contrast is what gives basbousa its glossy, soaked center. Score the cake before baking so it comes out in neat diamonds.
