Bastani is the ice cream of Iran, famously dense and elastic, made with saffron, rosewater, and pistachios. Traditional bastani is stretched with salep, a ground orchid root that gives it its chewy, taffy-like texture, but a home version with a simple custard base captures the same golden flavor. It is served scooped into cones or pressed between wafers called bastani-e nooni. If you can find salep, a teaspoon of it with the sugar gives the ice cream its famous stretch; without it, a custard base still makes a magnificent scoop.

Golden, silky, and perfumed like a garden

The custard is rich and silky, the color of sunshine, with the perfume of rose and saffron and the crunch of pistachios in every bite. A few frozen raspberries or a drizzle of sour cherry syrup make it sing. Churn it well and freeze it firm — worth the wait on a hot afternoon. For the classic street style, sandwich a scoop between two thin wafers or serve it in a cone with a drizzle of sour cherry syrup.

Step by stepInstructions

  1. Dissolve the saffron in 2 tablespoons of hot water.
  2. Heat the milk, cream, and half the sugar in a saucepan until steaming but not boiling.
  3. Whisk the yolks with the remaining sugar and salt in a bowl. Slowly whisk in the hot milk, then return everything to the saucepan.
  4. Cook over low heat, stirring constantly, until the custard thickens and coats the back of a spoon, about 8 minutes. Do not boil.
  5. Strain into a bowl and stir in the saffron water, rosewater, and vanilla. Chill completely, at least 3 hours.
  6. Churn in an ice cream maker according to the manufacturer's instructions, folding in the pistachios during the last few minutes.
  7. Freeze until firm, about 2 hours, before scooping.

💡 Chef tips & storage

Chill the custard completely before churning for the smoothest texture, and start a day ahead — it needs at least 3 hours to chill and 2 more to freeze. If you can find salep, add 1 teaspoon with the sugar for that classic chewy stretch; otherwise the custard base alone is lovely.
