When harvest season arrives, the valley gives two gifts at once: fragrant pears and bold red wines, and this dessert is the classic way to marry them.

What makes it great is the transformation: firm pears simmered in spiced red wine turn jewel-red and impossibly silky, their flavour deepened by the wine’s fruit and the warmth of cinnamon and star anise. The wine reduces into a glossy syrup that glazes each pear like a gem. It’s an elegant, make-ahead dessert that looks like you fussed for hours — and pairs beautifully with a scoop of vanilla ice cream or a dollop of crème fraîche.

Step by stepInstructions

  1. Pour the wine, sugar, and water into a pot just large enough to hold the pears upright, and stir to dissolve the sugar.
  2. Add the cinnamon stick, star anise, vanilla, and orange zest and bring the liquid to a gentle simmer.
  3. Stand the peeled pears upright in the pot and add extra wine or water if needed to cover them almost completely.
  4. Simmer gently, partially covered, for 30 to 45 minutes, turning the pears occasionally, until a knife slides into them easily.
  5. Remove the pears with a slotted spoon, then boil the poaching liquid until it reduces to a glossy syrup, about 15 minutes.
  6. Serve the pears warm or chilled, drizzled with the syrup and topped with vanilla ice cream.
