Potjiekos means small-pot food, and it is South Africa’s great outdoor tradition: a three-legged cast-iron pot set over coals, filled with layered meat and vegetables, and left to simmer for hours while the stories flow. The ritual matters as much as the recipe, because the pot is never stirred, and each ingredient keeps its own character. This version brings the whole experience to a home stovetop or oven.

Layered, tender, and built on patience

Chuck steak melts into spoon-tender strands while carrots, potatoes, and tomatoes soften above it, catching the juices as they bubble up. Because nothing is stirred, every spoonful is a little different, some rich and winey, some sweet with carrot and onion. Serve it straight from the pot with crusty bread, rice, or pap and a big green salad.

Step by stepInstructions

  1. Heat the oil in a large cast-iron pot or heavy Dutch oven over medium-high heat and brown the beef in batches until deeply colored on all sides, about 6 minutes per batch.
  2. Remove the beef and layer the onions, garlic, and tomatoes in the bottom of the pot, then return the beef on top.
  3. Stir together the tomato paste, wine, stock, salt, pepper, bay leaves, and thyme, and pour it over the meat without disturbing the layers.
  4. Bring to a gentle simmer, cover, and cook over low heat for 2 hours without lifting the lid or stirring.
  5. Nestle the carrots and potatoes on top of the beef, pressing them gently into the liquid.
  6. Cover again and simmer for 1 hour more, until the beef is fork-tender and the sauce is rich and glossy.
  7. Skim off any excess fat, taste for salt, and serve straight from the pot.

💡 Chef tips & storage

Resist the urge to stir — the layering is what makes potjiekos special. If the liquid runs low, add hot beef stock, never cold water.
