Bicol Express — pork belly simmered in coconut milk with shrimp paste and chilies

Bicol Express comes from the Bicol region, where coconut milk and chili are the cornerstones of the kitchen, and it is one of the spiciest things Filipino home cooking has to offer. Named after the train that once ran between Manila and Bicol, the dish is a love letter to creamy coconut and searing heat, with salty shrimp paste tying it all together. It is the dish you make when you want dinner to make you sit up and pay attention.

Creamy, fiery, and utterly addictive

The coconut milk simmers down into a rich, lightly thickened sauce that clings to tender cubes of pork belly, while shrimp paste gives everything a deep, savory funk. Then come the chilies — a gentle warmth from long green ones and a proper bite from tiny bird’s-eye chilies. Over a mound of rice, with the sauce pooling at the edges, it is comfort food with a pulse.

Step by stepInstructions

  1. Heat the oil in a large pot over medium-high heat and brown the pork belly cubes until golden on all sides, about 5 minutes.
  2. Add the garlic, onion, and ginger and cook for 2 minutes, until fragrant.
  3. Stir in the shrimp paste and cook for 1 minute, mashing it into the pork.
  4. Pour in the coconut milk and bring to a gentle simmer. Cook uncovered for 25 to 30 minutes, stirring occasionally, until the pork is tender and the sauce has thickened slightly.
  5. Add the long green chilies and whole Thai chilies and simmer for 3 minutes more.
  6. Season with salt, taste, and adjust. Serve hot over steamed rice.

💡 Chef tips & storage

Simmer the coconut milk at a lazy bubble or it can split and curdle. Leave the chilies whole if you want aroma without full fire — the heat lives in the seeds.
