Bitterballen are the Netherlands’ ultimate bar snack: crisp, breaded golden spheres hiding a molten beef ragout that spills out when you bite. They arrive at café tables across the country, speared on a toothpick beside a pot of mustard.

Their filling starts as a thick, well-seasoned roux-based stew that must chill completely before rolling and frying. Serve them piping hot — lukewarm bitterballen are a tragedy — with grainy mustard for dipping.

Step by stepInstructions

  1. Melt the butter in a saucepan, stir in the flour, and cook for 2 minutes to make a roux.
  2. Whisk in the hot stock and milk, then simmer, stirring, until very thick — about 5 minutes.
  3. Stir in the minced beef, salt, nutmeg, pepper, and parsley; season well, since the flavor must carry through the coating.
  4. Spread the ragout in a shallow dish, cover, and chill for at least 2 hours until completely firm.
  5. Roll the firm ragout into 1-inch (2.5 cm) balls; coat in flour, then egg, then breadcrumbs.
  6. Fry in 350°F (175°C) oil in batches for about 4 minutes, until deep brown and hot through; drain and serve hot with mustard.

💡 Chef tips & storage

The chilling step is essential — a warm filling will fall apart in the fryer. For a main course, shape the same ragout into kroketten logs.
