Step by stepInstructions

  1. Mix the paprika, garlic powder, onion powder, oregano, thyme, cayenne, pepper, and salt in a shallow dish.
  2. Brush each fillet generously with melted butter and dredge in the spice blend, coating both sides.
  3. Heat a cast-iron skillet over high heat until smoking.
  4. Place the fillets in the skillet and cook 2-3 minutes per side, until the crust is dark and the fish flakes easily.
  5. Serve immediately with lemon wedges.

💡 Chef tips & storage

Open the windows — blackening makes a little smoke, and that's how you know it's working. Use a well-seasoned cast-iron skillet and don't crowd the fillets.
