Blueberry buckle is the dessert of Maritime berry patches and church bake sales, a cake that gets its name from the way the batter buckles and crinkles around the berries as it bakes. Wild lowbush blueberries — smaller, tarter and far more flavourful than the grocery-store kind — are the traditional filling.

Under a crown of buttery cinnamon crumbs lies a soft, tender crumb studded with berries that burst as they bake. Served warm with cream, it is the dessert that makes you wish blueberry season lasted all year.

Step by stepInstructions

  1. Preheat the oven to 350°F and butter an 8-inch square baking pan.
  2. Cream the butter and sugar, then beat in the egg and stir in the milk.
  3. Whisk the flour, baking powder and salt together and stir into the butter mixture until just combined.
  4. Fold in the blueberries gently, then spread the batter in the prepared pan.
  5. Mix the brown sugar, flour, cinnamon and cold butter with your fingers until crumbly and sprinkle it evenly over the batter.
  6. Bake for 40 to 45 minutes until golden and a toothpick comes out clean, and serve warm.

💡 Chef tips & storage

Serve it warm with a dollop of whipped cream for maximum effect. The buckle keeps for two days covered at room temperature, but leftovers are rare around here.
