Bossche Bol

The Bossche Bol is a giant cream puff from the Dutch city of Den Bosch — a cloud of softly whipped cream inside crisp choux pastry, fully dunked in glossy dark chocolate. One is a dessert, two is a declaration.

It is a celebration pastry of the southern Netherlands, often served at parties and birthdays, best eaten within hours of filling. Slice or crack it open at the table and let the chocolate shell shatter.

Step by stepInstructions

  1. Heat the butter and water in a saucepan until the butter melts and the mixture boils.
  2. Add the flour and salt at once and stir vigorously until the dough pulls away from the sides; cook for 1 minute more.
  3. Transfer to a bowl and beat in the eggs one at a time until the dough is glossy.
  4. Pipe or spoon 6 large mounds onto a parchment-lined tray and bake at 425°F (220°C) for 15 minutes, then 375°F (190°C) for 20 minutes until puffed and dry; cool completely.
  5. Whip the cold cream with the powdered sugar and vanilla to soft peaks.
  6. Slice the top off each puff, fill with whipped cream, and replace the top.
  7. Melt the chocolate with the glaze cream and butter; spoon over the bollen and chill briefly to set the glaze.

💡 Chef tips & storage

Fill the puffs no more than an hour before serving so the pastry stays crisp. Let the choux cool fully before adding the cream.
