Boterkoek

Boterkoek is the Dutch butter cake: dense, tender, and unapologetically rich, with a deep golden crust and a whisper of almond. It slices thin because you will want more than one piece.

Bakers across the Netherlands serve it with coffee as an everyday treat and a birthday classic. The secret is real butter and a patient hand — the batter is pressed into the pan, not poured, and baked until just set.

Step by stepInstructions

  1. Beat the butter and sugar until pale and fluffy, then beat in the egg and almond extract.
  2. Stir in the flour, baking powder, and salt until a soft dough forms.
  3. Press the dough evenly into a buttered 9-inch (23 cm) tart pan or springform pan.
  4. Brush with the egg glaze and score a diamond pattern with a fork; scatter over the almonds.
  5. Bake at 350°F (175°C) for 30 minutes until deep golden and just set. Cool in the pan, then slice thin.

💡 Chef tips & storage

Slightly underbaked is better than overbaked — the center should be just firm. Serve in thin slices with strong coffee.
