A homely favorite served in British kitchens and cafes for generations, it’s often flavored with nutmeg or a spoonful of marmalade. Serve it warm with a drizzle of cream or custard for the full effect.

  1. Butter the bread slices on one side, then cut each into triangles. Arrange half in a buttered 2-quart baking dish, buttered side up, scattering raisins and marmalade over them; top with the remaining bread.
  2. In a bowl, whisk the milk, cream, eggs, sugar, and vanilla until smooth.
  3. Pour the custard over the bread and press gently so the top slices soak. Let stand 15 minutes.
  4. Heat the oven to 350°F. Sprinkle the pudding with nutmeg and turbinado sugar.
  5. Bake until puffed and golden and the custard is just set with a slight wobble, 35-40 minutes. Let rest 5-10 minutes before serving warm.
