Briam — Greek roasted summer vegetables baked in olive oil

Briam is the Greek summer garden in one pan: zucchini, potatoes, peppers, and tomatoes roasted low and slow in a generous bath of olive oil until they collapse into sweetness. It is humble, rustic, and utterly delicious.

This dish shows up on Greek tables all summer long, often as a meatless main with crusty bread and feta. The slow roasting is the secret — be patient, let the vegetables caramelize, and mop up every drop of the golden juices.

Step by stepInstructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, toss the potatoes, zucchini, onion, and peppers with the olive oil, garlic, oregano, salt, and pepper.
  3. Spread the vegetables in a single layer in a large baking dish or rimmed sheet pan.
  4. Pour the grated tomatoes over the top and toss gently to coat.
  5. Cover with foil and roast 45 minutes. Remove the foil and roast 30-40 minutes more, until the vegetables are tender and the edges are caramelized.
  6. Let rest 10 minutes, scatter with parsley, and serve warm or at room temperature.
