The bûche de Noël, or Yule log, came to Quebec with French tradition, where the burning of a real log at Christmastime evolved into a dessert shaped like one. Quebec bakers perfected their own version — a light chocolate sponge rolled around fluffy cream and covered in rich frosting, scored to look like bark.
What makes it great is the combination of celebration and craft: a dramatic log on the table that slices into perfect spirals of chocolate cake and cream. It’s festive, impressive, and deeply nostalgic — finish it with meringue mushrooms and a dusting of ‘snow’ for the full effect.
