Burek is the Balkans’ great savory pastry — flaky, buttered layers of phyllo wrapped around a seasoned meat filling. Each slice reveals crisp golden spirals and juicy, onion-sweetened beef that make it impossible to stop at one piece.

Bakeries across the region sell burek by weight, still warm from the oven, and it is equally at home as breakfast, lunch, or a late-night snack. Serve it with plain yogurt for dipping.

Step by stepInstructions

  1. Preheat the oven to 375°F. In a skillet, cook the beef with the onions until browned; season with salt, pepper, and paprika, then cool.
  2. Unroll the phyllo and cover with a damp towel. Brush one sheet with oil, lay another on top, and brush that one too.
  3. Spoon a strip of filling along one long edge and roll the sheets into a tight log.
  4. Coil the log into a spiral in a greased baking dish, or repeat to fill the whole pan in parallel rows.
  5. Brush the top with beaten egg and bake for 35-40 minutes, until golden and crisp.
  6. Rest 10 minutes, then serve warm with yogurt.

💡 Chef tips & storage

Work quickly and keep the phyllo covered so the sheets stay pliable. A heavy cast-iron pan gives the crispiest bottom crust.
