Poutine was born in Quebec in the 1950s, but it took Toronto — with its famously diverse food scene — to reinvent it. Butter chicken came to Canada with Punjabi immigrants in the 1970s, and Toronto’s Indian restaurants made it a national favourite, even declaring it one of the city’s signature dishes. Somewhere along the way, someone had the brilliant idea to pour butter chicken over fries and cheese curds, and butter chicken poutine became the mash-up that defines Toronto’s modern food culture: two immigrant traditions colliding into something gloriously Canadian.

What makes it great is the unholy trinity of textures: crisp fries, squeaky curds, and that silky, tomato-butter sauce with tender chunks of chicken. The creamy, mildly spiced gravy soaks into the fries while the curds hold their squeak — every forkful is a little bit of everything. It’s messy, indulgent, and utterly irresistible, the kind of dish you order at 1 a.m. and dream about all week.

Step by stepInstructions

  1. Toss the cut potatoes with the oil and spread them in a single layer on a baking sheet, then bake at 425°F for 30 to 35 minutes, flipping once, until golden and crisp.
  2. Meanwhile, melt the butter in a large skillet and brown the chicken chunks for 5 to 6 minutes, then set them aside.
  3. In the same skillet, sauté the onion for 4 minutes, then add the garlic, ginger, garam masala, turmeric and cook for 1 minute until fragrant.
  4. Stir in the tomato purée and simmer for 5 minutes, then return the chicken to the pan.
  5. Pour in the cream and simmer gently for 8 to 10 minutes, until the chicken is cooked through and the sauce is thick and glossy.
  6. Pile the hot fries into bowls, scatter the cheese curds over them so they start to soften, and ladle the butter chicken and sauce generously on top.
  7. Serve immediately, while the curds still squeak.

💡 Chef tips & storage

The curds must be fresh and at room temperature — cold curds won't soften properly. Use a double-fry method for extra-crisp fries: fry once at 325°F, cool, then fry again at 375°F. For a restaurant finish, garnish with fresh cilantro and a drizzle of cream.
