Caldeirada de Peixe is a cousin of the great coastal stews — a rustic pot of layered fish, potato coins, onion and tomato that slowly melds into one glorious, spoonable whole. Its magic lies in patience: the fish poaches gently with barely enough liquid to cover.

Portuguese cooks treat the pot as a stage, each fish chosen for firmness and flavor. Serve it as a main course with good bread for the broth and a chilled white wine that can hold its own against the sea.

Step by stepInstructions

  1. Layer half the potatoes, onions, pepper and tomatoes in a heavy pot and season.
  2. Add the fish chunks, then cover with the remaining vegetables, garlic and bay leaves.
  3. Pour the wine and olive oil over everything and add just enough water to cover.
  4. Bring to a gentle simmer, cover, and cook until the potatoes are tender and the fish flakes, 30-35 minutes.
  5. Season, scatter with parsley, rest 10 minutes, and serve in wide bowls with bread.
