Caldo Verde is Portugal’s beloved green soup — a silky purée of potatoes and onions turned emerald with ribbons of collard greens, finished with a drift of chouriço slices and a drizzle of olive oil. It is the country’s most comforting bowl, served everywhere from taverns to weddings.

Simple ingredients hide real depth: the potato gives body, the greens give life, the sausage gives soul. Traditionally eaten with a slice of cornbread and a glass of red wine, it tastes of home in every spoonful.

Step by stepInstructions

  1. Simmer the potatoes, onion and garlic in the stock until very soft, about 25 minutes.
  2. Purée until silky, return to the pot, and season with salt and pepper.
  3. Add the shredded greens and simmer 5 minutes until tender but still bright green.
  4. Meanwhile, fry the chouriço slices in a dry pan until the edges crisp.
  5. Ladle the soup into bowls and top each with chouriço and a generous swirl of olive oil.
