This version layers basmati rice and spiced chicken with crispy fried onions, potatoes, and fresh herbs, then steams everything together until the flavors marry into one fragrant pot. The rice is fluffy and jeweled with turmeric, each grain separate yet soaked with the perfume of cinnamon, cardamom, and curry. Step by stepInstructions

  1. Rinse the rice and soak it in cold water for 20 minutes, then drain.
  2. Marinate the chicken with the yogurt, garlic, ginger, curry powder, turmeric, and salt in a bowl. Cover and set aside.
  3. Heat the oil in a large pot and fry the onions in batches until deep golden and crisp. Remove half for garnish and leave the rest in the pot.
  4. Add the marinated chicken and cook for 8 minutes, stirring, until lightly colored. Stir in the potatoes.
  5. Spread the drained rice over the chicken and pour in the stock. Sprinkle with the cilantro and mint.
  6. Bring to a gentle boil, then cover tightly, reduce the heat to low, and steam for 20 minutes without lifting the lid.
  7. Turn off the heat and rest, covered, for 10 minutes.
  8. Fluff the rice gently with a fork, scatter with the reserved fried onions, and serve.
