Capuns are tender Swiss chard leaves wrapped around a bread-and-sausage filling, baked in broth and cream under a blanket of melted cheese. They arrive at the table golden, fragrant, and deeply comforting.

A beloved specialty of the Grisons, they are rustic Alpine cooking at its best. Serve them steaming from the dish with a green salad, letting everyone lift out their own little parcels.

Step by stepInstructions

  1. Blanch the chard leaves in boiling salted water for 1 minute, then transfer to an ice bath and pat dry. Trim the thickest part of each stem.
  2. Soak the bread cubes in the milk for 10 minutes, then squeeze gently and combine with the sausage, onion, egg, half the cheese, nutmeg, salt, and pepper.
  3. Place a spoonful of filling on each leaf and roll into neat parcels.
  4. Arrange the rolls seam-side down in a buttered baking dish. Mix the broth and cream, pour over the rolls, and dot with butter.
  5. Bake at 375°F for 35 minutes, then scatter the remaining cheese on top and bake 5–10 minutes more, until golden and bubbling.

💡 Chef tips & storage

Use day-old bread so the filling holds its shape, and do not overfill the leaves or they will burst. Leftovers reheat beautifully under a sheet of foil.
