Causa’s name is said to come from the Quechua word for ‘sustenance,’ and during the 19th-century wars it became a patriotic favorite in Lima. Today the city’s cooks press mashed yellow potatoes with lime and aji amarillo into neat layers around chicken, avocado, and mayonnaise.
