Silky palmito rounds soak up lime, onion, tomato, and culantro to make a refreshing, vegetarian ceviche. It is served chilled on tostadas or in lettuce cups, perfect for hot coastal days.

  1. Drain and rinse the heart of palm, then slice into thin rounds and place in a glass bowl.
  2. Add the onion, tomato, bell pepper, and culantro.
  3. Pour over the lime juice and olive oil, season with salt and pepper, and toss gently to coat.
  4. Chill for at least fifteen minutes so the flavors marry, then serve cold on tostadas or in lettuce cups.

Let it marinate no more than an hour — palmito stays delicate, and the lime keeps it bright. If using fresh palmito, simmer it in salted water for twenty minutes until tender before slicing.
