Hearty Acadian chicken fricot stew with potatoes and summer savory

Fricot is the dish Acadians measure home by — a one-pot chicken stew that has simmered in New Brunswick kitchens for over three centuries. The essential seasoning is sarriette, summer savory, a herb that Acadians grow in every dooryard garden and consider as indispensable to fricot as salt.

It is a patient, generous stew: chicken simmered to tenderness, potatoes and carrots cooked into the broth, and a crown of soft drop dumplings steamed on top. Ladle it into deep bowls, and you will understand why every Acadian grandmother has strong opinions about the dumplings.

Step by stepInstructions

  1. Brown the chicken pieces in a large pot in a little oil, then add the onion and cook until soft.
  2. Add the water or broth, summer savory, salt and pepper, and simmer for 30 minutes until the chicken is tender.
  3. Remove the chicken, shred the meat, and return it to the pot.
  4. Add the potatoes and carrots and simmer for 15 minutes until tender.
  5. Stir the flour, baking powder, salt, butter and milk into a soft dumpling dough and drop spoonfuls over the simmering stew.
  6. Cover and cook for 15 minutes without lifting the lid, then serve the fricot with a dumpling on top of each bowl.

💡 Chef tips & storage

Summer savory is the soul of fricot — if you cannot find it, thyme is the closest cousin. The dumplings need a sealed lid and 15 undisturbed minutes; patience is the whole trick.
