Chicken Inasal — char-grilled chicken marinated in calamansi and lemongrass with annatto oil

Inasal is the smoky, golden-orange grilled chicken that made the city of Bacolod famous. Chicken legs and thighs marinate in calamansi, vinegar, lemongrass, and garlic, then grill over charcoal while being basted constantly with annatto oil, which gives the skin its signature burnished glow. In Bacolod, inasal is a point of pride — restaurants there are judged by the quality of their marinade and their basting oil, and it is always served with garlic rice and a fiery vinegar dip.

The basting does the magic: the annatto oil keeps the skin crackling and glossy while the marinade works its way deep into the meat, leaving it tart, savory, and fragrant with lemongrass. Every bite has that bright calamansi tang balanced by the char of real fire. There is a reason it is eaten with bare hands — the skin is too good to share with a fork, and the vinegar dip begs for dipping.

Step by stepInstructions

  1. In a large bowl, combine the calamansi juice, vinegar, soy sauce, lemongrass, ginger, garlic, brown sugar, pepper, and salt. Add the chicken and massage the marinade into every piece.
  2. Cover and marinate in the fridge for at least 2 hours, preferably overnight.
  3. Heat a grill or grill pan to medium heat and oil the grates.
  4. Grill the chicken for 12 to 15 minutes per side, brushing with annatto oil every few minutes, until the skin is deeply golden and the chicken is cooked through.
  5. Stir together the vinegar, garlic, and chili for the sinamak dipping sauce.
  6. Let the chicken rest for 5 minutes, then serve hot with garlic rice and the dipping sauce.

💡 Chef tips & storage

Baste with annatto oil every few minutes — it gives the skin its burnished color and keeps the meat juicy. Marinate overnight if you can; the lemongrass and calamansi really get in there.
