Machboos is the one-pot dinner of the Gulf coast, claimed with equal pride by Bahrain, Kuwait, and the eastern provinces of Saudi Arabia. The chicken is browned with a generous hand of baharat, then simmered with pierced black limes until the broth turns deep and fragrant, and the rice finishes cooking right in that same broth. The rivalry with kabsa is friendly and endless, but machboos keeps its own identity: darker, tangier, and built around the sour depth of dried lime.
