Choucroute Garnie is Alsace’s magnificent mountain of sauerkraut braised in white wine and juniper, piled high with smoked pork shoulder, sausages, and bacon. The tart kraut cuts through the rich, smoky meats beautifully.
A winter feast built for a crowd, it is traditionally served with boiled potatoes, good mustard, and a glass of dry Riesling. The whole dish steams together in one pot, filling the kitchen with the most welcoming of aromas.
