Chupe de Camarones

Chupe de camarones comes from Arequipa, where freshwater shrimp and dairy-rich highland cooking meet in one steaming bowl. It is a chowder in the truest sense: substantial enough to be a meal, creamy with milk and cheese, and fragrant with oregano and aji amarillo.

A soup that eats like a feast

The broth is silky and lightly sweet from the shrimp shells, warmed by aji amarillo and thickened with rice and potato. Each spoonful brings tender shrimp, melting cheese, and a soft poached egg hiding at the bottom of the bowl.

Step by stepInstructions

  1. Peel the shrimp, reserving the shells, and simmer the shells in the stock for 15 minutes, then strain and keep the flavored stock.
  2. Heat the oil in a large pot and cook the onion for 4 minutes, then add the garlic and aji amarillo and cook 1 minute more.
  3. Add the tomatoes, oregano, salt, and pepper and cook for 3 minutes until the tomatoes soften into a sauce.
  4. Pour in the strained stock and the milk, add the potatoes and rice, and simmer for 15 minutes until the potatoes are tender and the rice is cooked.
  5. Add the shrimp and queso fresco and simmer for 3 minutes, just until the shrimp turn pink.
  6. Crack the eggs into the pot, cover, and poach for 3 to 4 minutes until the whites are set but the yolks are still soft.
  7. Ladle into bowls, making sure each gets an egg, and scatter cilantro on top before serving hot.

💡 Chef tips & storage

Simmering the shells in the stock is what gives the chupe its deep, briny sweetness — never skip it. Leftovers keep 2 days refrigerated but the eggs are best enjoyed the day it is made.
