Chupe de Mariscos

Chupe de mariscos is a rich Chilean casserole of mixed seafood folded into a creamy, paprika-scented sauce, topped with cheese and baked until golden. It arrived from Peru centuries ago and became a coastal classic, served bubbling in clay dishes with crusty bread.

The sauce is velvety and lightly sweet from the onion, warm with paprika, and packed with shrimp, mussels, and squid. The cheese crust adds a salty, gooey finish that makes every spoonful irresistible.

Step by stepInstructions

  1. Preheat the oven to 375°F and butter a 9-by-13-inch baking dish.
  2. Melt the butter in a large skillet over medium heat and cook the onion for 6 minutes until soft; add the garlic and paprika and cook 1 minute.
  3. Pour in the milk and cream, bring to a gentle simmer, and whisk in the breadcrumbs; cook 3 minutes until the sauce thickens.
  4. Stir in the seafood, lemon juice, salt, and pepper and cook 2 minutes — the seafood will finish in the oven.
  5. Pour the mixture into the baking dish and top with the mozzarella and Parmesan.
  6. Bake for 20 to 25 minutes until bubbling and golden on top; rest 5 minutes, then finish with parsley and serve with crusty bread.

💡 Chef tips & storage

Don't overcook the seafood on the stove — it finishes in the oven, so 2 minutes is plenty. Serve straight from the baking dish with good bread for the sauce.
