Broccoli cheddar soup became widely popular in the United States starting in the 1980s and 1990s, largely thanks to Panera Bread and other casual dining chains that popularized the rich, cheesy soup served in bread bowls. It has since become one of the most beloved American comfort soups.

Rich, cheesy, and packed with broccoli

Step by stepInstructions

  1. Melt the butter in a pot and sauté the onion until softened.
  2. Whisk in the flour and cook 1 minute.
  3. Gradually whisk in the broth and milk until smooth.
  4. Add the broccoli and carrots, and simmer 15-20 minutes until tender.
  5. Reduce the heat to low and stir in the cheese until melted, being careful not to boil.
  6. Season with salt and pepper and serve.

💡 Chef tips & storage

Keep the heat low once the cheese is added, as boiling can cause it to separate or become grainy. For a chunkier texture, blend only half the soup and leave the rest whole.
