Pol roti, or coconut roti, is the everyday flatbread of Sri Lankan homes, made with grated coconut folded straight into the dough. It is often the breakfast of choice, cooked on a flat griddle while the kettle boils for tea, and it is equally good at dinner under a spoonful of dhal. Villagers still bake it over wood fires, and the charred, smoky spots are part of the charm. Some families add a handful of chopped leeks or extra curry leaves right into the dough, and it needs no oven at all.

The bread is soft and tender with a gentle chew, the grated coconut adding sweetness and a fine, crumbly texture, with onion and chili running through every bite. Eat it warm with dhal curry, seeni sambol, or a cup of strong milk tea. Leftovers are excellent split and toasted the next morning, and it also travels well in a lunchbox.
