Pan de Yuca - Golden Yuca Cheese Breads

Pan de yuca is Ecuador’s beloved cheese bread, a simple dough of yuca starch, fresh cheese, butter, and egg that bakes into glossy, puffed golden orbs. Served warm from bakeries and street carts with coffee, yogurt, or the frothy drink called colada, it is the perfect savory-sweet snack.

Chewy, cheesy, and irresistibly puffy

The outside bakes crisp and lightly blistered while the inside turns soft, chewy, and stretchy from the melted cheese — the signature yuca-starch texture that is bouncy without being tough. They deflate slightly as they cool, which is completely normal and utterly delicious.

Step by stepInstructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment.
  2. Mix the yuca starch, salt, baking powder, and anise in a bowl, then rub in the softened butter with your fingertips.
  3. Add the cheese and mix, then add the egg and milk and knead into a smooth, slightly sticky dough, adding milk a tablespoon at a time if needed.
  4. Roll the dough into 1 1/2-inch balls and place them 2 inches apart on the baking sheet.
  5. Bake for 15 to 18 minutes until puffed and lightly golden, and serve warm.

Serve them warm — that is when the cheese is at its stretchiest and best. Unbaked balls freeze beautifully; bake from frozen for about 20 minutes.
