  1. Cook the bacon in a large pot until crisp, then remove, leaving the fat.
  2. Sauté the onion in the bacon fat until softened.
  3. Add the potatoes, half the corn, and chicken broth. Simmer 15 minutes until the potatoes are tender.
  4. Blend half the soup until smooth, then return it to the pot for a creamy-chunky texture.
  5. Whisk the flour into the cream, then stir into the soup along with the remaining corn.
  6. Simmer 5-10 more minutes until thickened, and top with bacon and green onions.

💡 Chef tips & storage

Blending only part of the soup gives a chowder that's creamy but still has plenty of texture. Fresh summer corn gives the sweetest, best flavor, though frozen works well any time of year.
