Country Style Pork Chops

Bone-in pork chops pan-fried and simmered in a savory pan gravy until tender.

Weeknight chops, mountain style

Bone-in chops browned in a skillet and simmered in a rich onion gravy — simple, savory, and made for mashed potatoes.

Step by stepInstructions

  1. Season the chops with salt and pepper. Heat the oil in a skillet and brown the chops 3-4 minutes per side; remove.
  2. Cook the onion in the same skillet until soft; add the garlic and cook 1 minute.
  3. Whisk in the flour and cook 2 minutes; gradually whisk in the broth and milk.
  4. Return the chops, add the sage and thyme, cover, and simmer 25 minutes until tender.
  5. Season the gravy to taste and serve the chops with the gravy spooned over.

💡 Chef tips & storage

Simmering keeps thin chops tender instead of tough. Serve over mashed potatoes to catch every drop of gravy.
