Louisiana crawfish boil with red crawfish, corn, potatoes, onions and garlic on butcher paper

The crawfish boil is the social event of Louisiana spring — crawfish, corn, potatoes, and smoked sausage boiled together in a pot loaded with Cajun seasoning and lemons, then dumped on newspaper for everyone to peel and eat. It’s messy, spicy, and non-negotiable.

Chef Emily presents Crawfish Boil

The big pot, the big table, the big feast

A large-batch seasoned boil of crawfish, corn, sausage, and potatoes — the centerpiece of Louisiana springtime gatherings.

Step by stepInstructions

  1. Rinse and purge the crawfish in fresh water. Drain well.
  2. Bring the water to a rolling boil with the Cajun seasoning, salt, garlic, lemons, and onions.
  3. Add the potatoes and cook 10 minutes, then add the corn and sausage and cook 5 minutes more.
  4. Add the crawfish, cover, and cook 5 minutes after the boil returns.
  5. Turn off the heat and let everything steep 20 minutes. Drain, pour out onto newspaper, and serve with melted butter.

💡 Chef tips & storage

Season boldly — the water should taste aggressively spicy so the crawfish pick up flavor. Soak everything off the heat for 20 minutes before serving; that's where the magic happens.
