Crêpes Suzette is the theatrical classic of the French table: thin, tender crêpes folded in a glossy orange-butter sauce and flambéed with orange liqueur at the moment of serving. The flames caramelize the sauce and perfume the whole room.
Long a ceremony of high-end restaurants, it is surprisingly easy at home — the drama is half the fun. Serve immediately, still glistening, with the remaining sauce spooned over the top of each folded crêpe.
