Step by stepInstructions

  1. Toss the cubed butternut with the oil, half the salt, and a pinch of pepper, and spread on a baking sheet.
  2. Roast at 400 F for 25 to 30 minutes, until tender and caramelized at the edges.
  3. Meanwhile, melt the butter in a large pot and cook the onion until soft, about 6 minutes. Add the garlic, ginger, and curry powder and stir 1 minute.
  4. Add the roasted butternut, stock, remaining salt, and pepper, and simmer for 10 minutes.
  5. Puree the soup with an immersion blender until completely smooth.
  6. Stir in the coconut milk and warm through gently; do not boil.
  7. Ladle into bowls and finish with a swirl of cream and a scatter of cilantro.

Roast the butternut until it is caramelized at the edges — that sweetness is the heart of the soup. Blend in batches and leave the lid slightly ajar to let steam escape.
