Dal tadka is the daily companion of roti and rice across North India, the meal that mothers make when they want something nourishing and familiar. Yellow toor dal is simmered until completely soft, then finished with a tadka, a sizzling pour of ghee bloomed with cumin, garlic, and dried chilies. The name means lentils with a tempering, and that sizzle is the whole soul of the dish.

  1. Place the dal in a pot with the water, turmeric, and half the salt. Bring to a boil, then simmer partially covered for 25 minutes, until the lentils are soft and falling apart.
  2. Mash the dal slightly with a spoon and add the chopped tomato. Simmer for 5 more minutes, then adjust salt.
  3. Make the tadka: heat the ghee in a small pan over medium-high heat. Add the cumin and mustard seeds and let them sizzle and pop.
  4. Add the garlic and dried red chilies and cook for 30 seconds, until the garlic turns golden and fragrant.
  5. Add the asafetida, then immediately pour the sizzling ghee over the dal. It should hiss and bubble as it hits.
  6. Stir gently, scatter with cilantro, and serve hot with rice or roti.
