Sweet lump Dungeness crab, lightly bound and pan-seared golden, with lemon aioli — crab cakes at their best.

Step by stepInstructions

  1. Gently mix the crab, panko, 1/4 cup mayo, egg, mustard, lemon juice, chives, salt, and pepper. Form into 8 cakes and chill 20 minutes.
  2. Whisk the 1/2 cup mayo with the lemon zest and garlic for the aioli.
  3. Heat the butter and oil in a skillet over medium heat.
  4. Cook the cakes 3-4 minutes per side until golden and heated through.
  5. Serve with the lemon aioli.

Use real lump crab and keep the pieces big — gentle hands make better crab cakes. Chill the cakes 20 minutes before frying so they hold together.
