An Éclair au Chocolat is the elegant French pastry of choux dough piped into slender logs, baked until hollow and golden, then filled with silky vanilla pastry cream and capped with a glossy dark chocolate glaze. One bite shatters, then melts.

A fixture of every French pâtisserie window, the éclair is best eaten the day it is filled. Enjoy it with coffee as an afternoon treat, and don’t be shy about the chocolate — the glaze should be generous.

Step by stepInstructions

  1. Make the choux: boil the water, milk, butter, salt, and sugar; beat in the flour and cook 2 minutes. Beat in the eggs one at a time until glossy.
  2. Pipe 4-inch logs onto a lined baking sheet and bake at 375°F for 30 to 35 minutes, until puffed, dry, and golden. Cool completely.
  3. Make the pastry cream: whisk the yolks, sugar, and cornstarch; scald the milk and temper it in; return to the heat and whisk until thick. Stir in the vanilla and chill.
  4. Fill the cooled shells through small holes with the pastry cream.
  5. Make the glaze: melt the chocolate with the warm cream, then dip the tops of the éclairs. Let the glaze set before serving.

💡 Chef tips & storage

Bake the choux until deep golden and dry, or the shells will collapse. Fill éclairs just before serving so the shells stay crisp.
