Mandioca is the backbone of Paraguayan cooking, and this simple salad is one of its best showcases: creamy boiled cassava cubes tossed with crisp onion, juicy tomato, and a sharp lemon-and-oil vinaigrette. It’s the classic side at asados and family lunches, refreshing next to rich grilled meat.

Boiled cassava, bright vinaigrette, zero fuss

The cassava is soft and starchy like a good potato, and it soaks up the tangy dressing beautifully while the raw onion and tomato keep everything fresh and crunchy. Served cool or at room temperature, it’s light, satisfying, and made for sharing.

Step by stepInstructions

  1. Put the mandioca in a pot, cover with salted water, and boil for 20 to 25 minutes until tender but still holding its shape.
  2. Drain and let it cool for 10 minutes (warm is fine for serving).
  3. Soak the sliced onion in cold water for 5 minutes to mellow it, then drain.
  4. In a big bowl, whisk the oil, lemon juice, salt, and pepper.
  5. Add the mandioca, onion, tomatoes, and parsley, and toss gently to coat.
  6. Let it sit 10 minutes so the flavors soak in, then serve at room temperature.

💡 Chef tips & storage

Don't overcook the mandioca — it should be tender but not mushy so the cubes hold their shape in the salad. It keeps 2 days refrigerated; bring to room temperature and add a splash of oil before serving.
