- Grate the yuca finely using a box grater or food processor; squeeze out as much liquid as possible.
- Combine the grated yuca with the coconut, cheese, butter, eggs, sugar, anise, milk and salt and mix until well blended.
- Pour the mixture into a buttered 9-inch baking dish and smooth the top.
- Bake at 350°F (175°C) for 45 to 50 minutes, until golden brown and set in the center.
- Let cool slightly, cut into squares and serve warm, drizzled with honey if desired.
💡 Chef tips & storage
Squeeze the grated yuca very dry — too much liquid makes the enyucado heavy and gummy. The edges should be deeply golden and slightly caramelized; that is the best part.
