Espumilla is the whimsical dessert of Quito’s street carts: glossy meringue folded with guava syrup, spooned into cups, and finished with a swirl of guava jam and a dusting of cinnamon. It is light as air, intensely fruity, and a beloved childhood memory for generations of Quiteños.
