Feijoada à Transmontana is the hearty bean stew of northern Portugal, a slow-simmered pot of red or white beans, cured pork, sausage and greens that tastes like the mountains it comes from. It is rustic, smoky and deeply satisfying.

In Trás-os-Montes the stew is a cold-weather staple, often cooked over a wood fire and served with boiled potatoes and rice. The beans soak up every drop of pork flavor, and a spoonful of good olive oil at the end ties it all together.

Step by stepInstructions

  1. Drain the soaked beans and place them in a large pot with the pork belly, chouriço and ham hock; cover with water.
  2. Simmer 1 1/2 hours, skimming foam, until the beans are almost tender.
  3. Sauté the onions and garlic in the olive oil, add the tomatoes, paprika and cumin, and stir the mixture into the pot.
  4. Add the shredded greens and simmer 20-30 minutes, until the beans are creamy and the stew has thickened.
  5. Season, rest 10 minutes, and serve with boiled potatoes or rice and a drizzle of olive oil.
