The fermented rice is made from glutinous rice and a touch of yeast, and it is sold in jars at Asian grocery stores, which makes this dessert surprisingly easy at home.   1. Mix the glutinous rice flour with the warm water and salt, and knead into a smooth, pliable dough. Cover with a damp towel.
  2. Pinch off small pieces of dough, flatten each into a disc, and place a small ball of red bean paste in the center. Pinch the edges closed and roll into a ball.
  3. Bring the 4 cups of water to a boil and drop in the rice balls. Cook until they float and puff up, 4 to 5 minutes.
  4. Add the fermented rice and sugar, and stir gently for 2 minutes, until fragrant and hot.
  5. Drizzle the beaten egg into the soup in a thin stream while stirring, to form soft ribbons.
  6. Ladle into bowls and serve warm.
