Fettuccine Alfredo is pure indulgence: wide ribbons of pasta tossed with butter, cream, and Parmigiano-Reggiano until the sauce turns thick and glossy. Simple, rich, and dangerously easy to finish.

Beloved in Italy and around the world, this dish is best served piping hot with extra cheese on top. Add a crack of black pepper and, if you’re feeling fancy, a few seared shrimp or grilled chicken.

  1. Cook the fettuccine in salted boiling water until al dente; reserve 1 cup of pasta water before draining.
  2. Meanwhile, melt the butter in a large skillet over medium heat; add the cream and simmer gently until slightly thickened, about 3-4 minutes.
  3. Reduce the heat to low and whisk in the Parmesan a handful at a time until smooth.
  4. Add the drained pasta and toss, adding pasta water a splash at a time until the sauce coats every strand.
  5. Season with salt, pepper, and nutmeg; serve immediately with parsley and extra cheese.

💡 Chef tips & storage

Grate the Parmesan fresh — pre-shredded cheese won't melt into the same silky sauce. Serve the moment it's tossed; Alfredo doesn't reheat gracefully.
