The breadfruit tree, or uto, is called the tree of life across the Pacific, and in Fiji it has fed families for centuries. When the season arrives, the fruit appears at every market and in every kitchen, and simmering it in a fragrant coconut curry is one of the favorite ways to enjoy it.

What makes it great: breadfruit soaks up the curry sauce like a sponge while keeping a satisfying, potato-like bite, and its subtle sweetness plays beautifully against the warm spices. It is filling, budget-friendly, and a wonderful vegetarian centerpiece.

Step by stepInstructions

  1. Parboil the breadfruit chunks in salted water for 8-10 minutes until just fork-tender; drain well.
  2. Heat the oil in a pot and saute the onion, garlic, ginger, and chili until soft, about 4 minutes.
  3. Stir in the curry powder and turmeric and cook for 1 minute until fragrant.
  4. Add the breadfruit and toss to coat in the spices.
  5. Pour in the coconut cream with 1/2 cup water, season with salt, and simmer gently for 12-15 minutes until the sauce thickens and the breadfruit is fully tender.
  6. Garnish with cilantro and serve with rice or roti.
