Chowmein arrived in Fiji with Chinese migrants in the early 1900s and quickly became one of the nation’s most beloved foods. Every Fijian town has its own take, from roadside stalls at the market to family kitchens, and the version cooked at home is a proud fusion of Chinese technique and Fijian ingredients.

What makes it great: the noodles are fried until they develop smoky, charred edges, tossed with crunchy vegetables and a glossy soy-based sauce. It is fast, flexible, and endlessly satisfying — the ultimate Fijian comfort food that everyone can agree on.

Step by stepInstructions

  1. Cook the noodles according to the package directions, drain, and set aside.
  2. Whisk the soy sauce, oyster sauce, and sugar in a small bowl.
  3. Heat 1 tbsp of the oil in a wok over high heat and stir-fry the chicken or beef until just cooked; remove and set aside.
  4. Add the remaining oil to the wok and stir-fry the onion, garlic, cabbage, carrot, and bell pepper for 2-3 minutes until crisp-tender.
  5. Return the meat to the wok, add the noodles and the sauce, and toss-fry for 2 minutes over high heat until everything is coated and the noodles are lightly charred.
  6. Scatter with green onions and serve hot.
