The ‘brewis’ is hard bread — the dense, cracker-like biscuit that sailors carried because it would keep for months without spoiling — and the fish is salt cod, preserved the same way the fishery had done for centuries. Both needed an overnight soak before they could be cooked, so this was a dish you planned a day ahead, the way you planned everything in a place where the pantry was the root cellar and the salt box.

What makes it great is how simple ingredients become something deeply satisfying. The fish turns flaky and savoury, the hard bread softens into a tender, chewy base, and the whole thing is crowned with scrunchions — cubes of salt pork fried until they’re golden and crisp. A spoonful of molasses drizzled over top is the traditional finishing touch, and the combination of salty, porky and sweet is one you’ll remember.

Step by stepInstructions

  1. Soak the salt cod in cold water overnight, changing the water once, and soak the hard bread in a separate bowl of cold water overnight.
  2. Drain the fish, place it in a pot of fresh cold water and simmer gently for 15 to 20 minutes until it flakes easily, then drain.
  3. Drain the hard bread, add it to a pot of fresh simmering water and cook for 5 to 10 minutes until softened, then drain well.
  4. Fry the salt pork cubes in a skillet over medium heat until they render their fat and turn golden and crisp — these are your scrunchions.
  5. Combine the flaked fish and softened brewis in a large bowl, toss with butter and onion, and season with pepper.
  6. Pile the mixture onto plates and shower generously with hot scrunchions, serving molasses on the side.

Don't let the hard bread boil hard or it will turn to mush — a gentle simmer is all it needs. Skimp on nothing when it comes to the scrunchions; they make the dish.
