Flammkuchen tarte flambée with crème fraîche, onions and bacon

Thin, blistered and smoky, Flammkuchen is Germany’s answer to pizza — a paper-thin crust topped with creamy crème fraîche, onions and bacon. It was born as a bread-baker’s test of oven heat, and it’s still baked screaming hot so the edges char and puff.

Hailing from the Alsace border region, it’s a beloved tavern snack, cut into squares and shared with cold beer or dry white wine.

Step by stepInstructions

  1. Mix the flour, salt, water and oil into a soft dough. Knead 5 minutes, cover and rest 30 minutes.
  2. Preheat the oven to its maximum (about 500°F) with a baking sheet or pizza stone inside.
  3. Divide the dough in half and roll each piece paper-thin into a rectangle.
  4. Spread with crème fraîche, then scatter with onion and bacon. Season with nutmeg, salt and pepper.
  5. Slide onto the hot sheet and bake 8–10 minutes until the edges are blistered and dark in spots.
  6. Garnish with chives, slice into squares and serve immediately.

💡 Chef tips & storage

Roll the dough as thin as you dare — the charred, puffed edges are the best part. A screaming-hot oven is essential; a cooler one gives a soft, doughy base.
